Banana Bread

*Preheat oven to 350 degrees
6 bananas mashed
4 eggs
1c butter
2c sugar
2 tsp baking soda
1tsp Salt
4c Flour
*Chocolate chips (Optional)

Mix together first 4 ingredients. Add last 3 ingredients*.
Pour into 2 loaf pans (I like to line it with Parchment paper) Bake for 40 minutes (or until a fork or skewer comes out clean.)
I like to put it in a ziplock bag while it is still warm (not hot) to keep it nice and moist.

i LOVE banana bread.
the recipe i use is similar, just made with wheat flour.

if you're interested, here it is:
2 and a 1/2 c. whole wheat flour
2 tsp. baking soda
1 tsp. salt
1 c. canola oil
2 c. sugar
2 c. mashed ripe banana
4 eggs
1 c. chopped walnuts or pecans.

Combine dry ingredients.
In separate bowl, blend oil and sugar.
Beat in banana then beat in eggs until completely mixed.
Stir in nuts then add combined dry ingredients and stir until just blended.
Bake at 350 for about an hour.
